    Easy Amish Ham Casserole

    Nothing says summer supper like a nice ham casserole. This Easy Amish Ham Casserole is a delicious supper that is really easy to fix. And there is some flexibility here. You can make your own baked potatoes and blend them in, which is the route most Amish cooks would take, or you can take a short cut and use 4 cups of frozen hashed browns in its place.

    As far as the cottage cheese goes, that is also something that most Amish cooks would probably use a homemade version. I've tried homemade cottage cheese in an Amish kitchen before and it's really good, not like the store-bought versions. At least the kinds I have tried have been less liquidy and more grainy than the store-bought counterparts.

    By the way, there's only one brand of cottage cheese that I've ever tried and been in love with and that is the Trauth brand. Trauth was a small regional dairy in northern Kentucky, not sure if they even still make their cottage cheese. Trauth was bought by Dean Foods years ago.

    So, anyway, Easy Amish Ham Casserole is a classic quick casserole packed with ham and eggs and it makes just as good of a breakfast as it does supper. Not sure how eggs became so ingrained as a "breakfast food", I enjoy scrambled eggs for supper as much as I do, if not more, as I do for breakfast.

    This recipe has pretty basic ingredients, you can use fresh ham steaks, fresh cheese, etc, or just use the processed, prepackage store stuff.

    Amish Ham Casserole

    This pairs well with some greens like spinach if you are having supper, or it enjoy it with toast for breakfast.

    🐖 Ham Casserole Ingredients

    • 1 lb ham, cubed
    • 1 med onion, chopped - optional
    • 6 eggs
    • 2 or 3 baked potatoes, diced into chunks
    • 2 cups shredded Cheddar and Colby Jack cheese
    • 1 ½ cups small curd cottage cheese

    📋 Casserole Instructions

    1. Combine the ingredients in a large mixing bowl.
    2. Transfer to a greased 13 in x 9 in baking dish.
    3. Bake , uncovered , at 350 degrees F for 35- 40 min or until set and bubbly.
    4. Let stand for 10 min. before cutting.

      This sounds good but I hate cottage cheese. However, I wonder if I could sub Ricotta cheese instead? I don't like greek yogurt or any of those subs but I'm Italian & I love Ricotta. I'll have to try that I let you know.

        You say 13x9 . Yet you show a loaf Pan?????? Recipe sounds great

          Hi, Robin, good eye...you could use either, make it more of a "loaf meal" with the loaf pan or have more square cuts with a 13 X 9 pan..either will work

      Actually, I have taken Cottage Cheese and whizzed it through the food processor - it looks like Ricotta Cheese and tasted great!
