    The Bishop's Hamburger Zucchini Skillet

    Bishop's Hamburger Zucchini Skillet is a popular recipe in Amish homes this time of year as the last of the zucchini are plucked from the garden. Skillet suppers are popular among the Amish because they are a wonderful way to put a lot of food into a single spot, cook it, and serve it.  Great way to feed a large family and the Amish are known for having large families. So check out Bishop's Hamburger Zucchini Skillet and some other "Skillet Suppers"

    Zucchini are started to come fast and furiously in many Midwestern USA Amish gardens.  Zucchini are prized among the Amish because they are so versatile.  Their relatively bland taste means they can add bulk and mild flavor to relishes, breads, brownies, soups, and used to bulk up a beef casserole like this one.


    If you travel through Amish country this time of year, you are bound to see makeshift roadside product stands selling zucchini of all shapes and sizes. The massive zucchini tend to be better candidates for grating and baking into bread.  The smaller ones tend to taste better in skillet suppers. 


    This recipe comes to us from an Amish bishop’s wife in Oklahoma.  She said it is her husband’s favorite casserole this time of year and maybe it will be yours too!

    You can use ground beef or shredded beef or a blend in this casserole. Brown the beef well.

    Fry the shredded zucchini...

    In a separate skillet (hence the name `skillet casserole') fry plenty of zucchini and onion. Use your judgment, the recipe calls for a single zucchini, but if yours is really small feel free to use one or two.

    Combine them...

    Then blend the two in the larger skillet. You'll probably want to cook a good 20 minutes longer once combined.

    And, delicious!

    Skillets are probably the single most used utensil in any Amish kitchen, because you can literally make a meal in it. This recipe requires two skillets, but most of the time, you can use one skillet for a meal, use some paper plates for supper and only end up using a single dish for a supper!

    • 1 zucchini shredded
    • 1 large onion shredded
    • ½ pound ground beef
    • 1 teaspoon salt
    • ¼ cup butter
    • 2 eggs
    • ⅓ cup milk
    • ¾ cup cracker crumbs
    • ¼ teaspoon pepper

    📋 Instructions

    1. heat butter in large skillet.
    2.  add onion, zucchini.
    3. In a separate skillet, fry ground beef  till brown.
    4. add to zucchini, simmer till soft, add salt pepper.
    5.  beat eggs, add milk. blend, then add cracker crumbs. add this to zuch. mixture. zuch. shrinks when cooked.

    Ingredients
      

    • 1 zucchini shredded
    • 1 large onion shredded
    • ½ pound ground beef
    • 1 tsp salt
    • ¼ cup butter
    • 2 eggs
    • ⅓ cup milk
    • ¾ cup cracker crumbs
    • ¼ teaspoon pepper
