Okay, the big Thanksgiving meal is just a day away, that means, get out the gravy boats, make sure you have the canned cranberries handy, the silver polished, and the turkey thawed! I'm sure your menu is already planned, but there's always time for a last minute addition, right? So for those who are kitchen procrastinators, or just in need of some last minute culinary inspiration, let's turn to the Amish for a last-minute recipe dump!

LIGHT & FLUFFY BUTTERHORN HOT ROLLS
1 1 /3 cup scalded milk
1 /2 cup sugar
1 package yeast in 1 /3 cup lukewarm water (or 1 tablespoon instant yeast)
3 eggs beaten
1 /2 cup oleo
1 teaspoon salt
6 cups flour
Mix everything together well and knead into an elastic dough. Let rise until double. Punch back down and let rise. Shape into rolls. Bake 30 minutes at 325. Makes light and fluffy rolls.
CRANBERRY SALAD
1 /2 pound cranberries (ground)
1 cup crushed pineapple
2 small boxes of cherry jello, add water as usual
2 cups sugar
6 cups apples, peeled and diced or shredded
1 /2 cup nut meats
1 /2 cup celery
Dissolve jello and sugar. Cool, then add remaining ingredients. This will not set as firm as usual, but it is not runny.
CHOCOLATE PEANUT BUTTER DELIGHT
1 box chocolate cake mix
1 /4 cup milk
½ cup butter, melted
Filling: 8 ounces cream cheese, softened; 1 cup powdered sugar, 1 cup peanut butter, 1 16 ounce tub of Cool Whip
In a bowl, combine cake mix, butter, milk and egg. Spread into a greased 9 X 13 pan. Bake at 350 for 30 minutes. Cool and cut into bite sized pieces. Beat cream cheese filling mixture and layer with brownies.
