Take some potatoes, make mashed potatoes out of them and then line them around the perimeter of this recipe. Yum!

This is another one of these recipes that I am sharing from a collection of recipes from Buchanan County, Iowa. Â This is a hearty casserole, one I could easily envision being prepared for a barn-raising meal or a Sunday supper. Â Casseroles are hugely popular with Amish moms because you can easily make them in large, spoonable quantities, perhaps for a house full of growing, hungry children. Â A casserole like this is perfect, especially during the summer months because they can just harvest most of the ingredients from their garden, use some fresh hamburger that they have on hand and get cooking! Â Good stuff, no need to fix a side vegetable. Â SIGH, I like bread with just about everything, so some crust bread to sop this in would be a plus!
- 1 /2 cup diced onions
- 2 tablespoons butter
- 1 pound hamburger
- 1 cup diced celery
- 1 cup sliced carrots
- 1 /3 cup green pepper
- 1 beef bouillon cube
- 3 /4 cup hot water
- 1½ teaspoon salt
- 2 tablespoons flour
- ¼ cup cold water
- 2 cups mashed potatoes
- Saute onions in butter.
- Add meat anmd cook until all the pink is gone.
- Add celery, peppers, carrots, cube, water, and seasonings.
- Cover and cook 5 minutes over high heat.
- Mix flour and ¼ cup water into smooth paste and add to mixture.
- Turn into casserole dish.
- Spoon mashed potatoes around the edge.
- Bake at 350 for about 45 minutes
