    Peanut Butter Christmas Stacks

    Homemade candies and confections are absolutely one way that the Amish will mark the occasion of Christmas.  And I know these Peanut Butter Christmas Stacks are last minute but if you suddenly find yourself in need of a quick treat for some unexpected company, here is an easy one.

    Peanut Butter Christmas Stacks

    Now, I can't remember where my wife got this recipe. It's not an Amish recipe per se, but this is the type of treat you'll find in an Amish kitchen this type of year: simple, quick, and amazing. I love these. I mean, what is there not to like about Ritz crackers?

    These stacks are good for kitchen-helpers, like our 3-year-old, Aster

    We made these snacks for a Christmas years ago, look how young Aster was back then in our previous house! Geez, time flies. We'll be making these stacks again this year.

    Make sure you melt your chocolate, but don't scorch it! You can even mix the white and milk chocolate together if you want for an interesting twist!

    There are variations in how you can make this recipe. You can use white chocolate or milk chocolate. Personally, I prefer the milk chocolate versions. You could probably try it with Club crackers and it would be great too. You also add some of your own touches to the peanut butter-marshmallow creme mixture, like some molasses or honey. The Christmas-colored sprinkles are a nice touch to make the snacks more festive. I can just eat stack after stack of these, and that's a problem.

    It is not uncommon at all for Amish kitchens to be full of candy-making in the week leading up to Christmas. It's the most common way to celebrate the season, whether it be dipping various goodies in chocolate, whipping up festive-looking treats with red hots and food coloring, or just baking some amazing holiday sweet bread.

    🎄 Peanut Butter Christmas Stacks

    • 48 Ritz crackers or buttery golden round crackers
    • ½ cup creamy peanut butter
    • ½ cup marshmallow creme
    • 1 pound chocolate, coarsely chopped and melted for dipping (see notes in blog post for chocolate recommendations)
    • holiday sprinkles, optional but recommended

    📋 Instructions

    1. Line a baking sheet with wax paper.
    2. Lay 24 crackers on a baking sheet; set aside.
    3. To a medium bowl, add the peanut butter, marshmallow creme, and stir to combine.
    4. Evenly spread a thin layer of the peanut butter-marshmallow mixture on the 24 crackers on the baking sheet.
    5. Top with the remaining 24 crackers, creating sandwiches; set aside.
    6. To a medium microwave-safe bowl, add the chopped chocolate and heat on high power in 15 to 30 second intervals, stirring after each ome. until chocolate can be stirred smooth.
    7. Dip each stack into the chocolate using one or two forks, allowing the excess to drip off. Place dipped stacks on baking sheet.
    8. Optionally add sprinkles, to taste.
