    Sour Cream Lemon Pie (With Gingersnap Crust)

    Finding festive, unique holiday recipes among the Amish and Mennonites can be difficult. A lot of Amish cooks rely on the tried and true for holiday food traditions: cinnamon rolls, for instance. Or cinnamon raisin bread. Or various pies, all of which are wonderful but maybe not all that offbeat.  This recipe, however, comes to us from an out of print Old Order Mennonite cookbook which showcases this sect's culinary creativity quite well.   And, you know, this Sour Cream Lemon Pie would be awesome for Mother's Day in the spring or, because of the ginger, festive around Christmas, too.

    Recipe tester Karen P. in North Carolina tested this out for us and had this to say:

    If you’re looking for a really good, creamy, lemony dessert, look no further!  This easy-to-make dish reminds me of a lemon meringue pie. The addition of sour cream gives a very smooth, creamy consistency to the filling. The gingersnap crust adds a wonderfully spicy counterpoint to the tart lemon.  The pie isn’t overly sweet, and would be a refreshing ending to a heavy meal. This is truly a 5-star dessert, and one I’ll make again...and again.

    So, there you go!  Gingersnaps and ginger cookies are a staple among the Amish, so incorporating them into a pie crust adds a festive flair.

    Lemons actually enjoy a strong following among Amish cooks.  Lemons ship well, so you’ll find them in Amish bulk food stores. And lemons are popular for making lemonade, pies, sauces, and all sorts of good things. During the summer, lemon is just a cool refreshing treat. For the Amish, when life gives you lemons, they make lemonade, lemon pie, lemon bread and on and on.

    🍋 Lemon Pie Ingredients

    • 1 cup sugar
    • 3 1 /2 tablespoons cornstarch
    • 1 tablespoon grated lemon peel
    • 1 /2 cup fresh lemon juice
    • 3 egg yolks, slightly beaten
    • 1 cup milk
    • 1 /4 cup butter
    • 1 cup sour cream

    📋 Instructions

    • Combine all, except butter and sour cream in a heavy saucepan. 
    • Cook over medium heat until thick. 
    • Stir in butter and cool to room temperature. 
    • Stir in sour cream and pour into pre-baked gingersnap pie shell. 
    • Cover with whipped cream and garnish with lemon twists (a thin slice of lemon twisted into an S shape) 
    • Store in the fridge.

    Sour Cream Lemon Pie (With Gingersnap Crust)

    Ingredients
      

    PIE

    • 1 cup sugar
    • 3 1 /2 tablespoons cornstarch
    • 1 tablespoon grated lemon peel
    • 1 /2 cup fresh lemon juice
    • 1 cup milk
    • 1 /4 cup butter
    • 1 cup sour cream

    GINGERSNAP CRUST

    • 1 ½ cups gingersnap cookie crumbs
    • ¼ cup butter

    Instructions
     

    PIE

    • Combine all, except butter and sour cream in a heavy saucepan. 
    • Cook over medium heat until thick. 
    • Stir in butter and cool to room temperature. 
    • Stir in sour cream and pour into pre-baked gingersnap pieshell.  C
    • Cover with whipped cream and garnish with lemon twists (a thinslice of lemon twisted into an S shape)  Store in the fridge.

    GINGERSNAP CRUST

    • Mix until crumbly and press into 9 inch pie pan and bake at 350 for 8minutes.

      In the print section of the recipe the 3 egg yolks are missing.
