A classic Amish haystack. This is from an Amish kitchen in Indiana.
AMISH HAYSTACKS: I didn't think I'd like this video at first, but a few things made me feel immediately more comfortable. She is based in Sarasota, Florida, which has a large "Plain community" of various varieties.  As a Yoder, she's obviously drawing upon their Plain culinary traditions. But she seems very authentic, she isn't pretending to be Amish (she's not). She's a Mennonite Mom surrounded by technology, but guided by tradition. I like that. We've talked a lot about Amish haystacks over the years, now you can see them being made by Lynette Yoder.
Now, we have published plenty of Haystack meals on Amish365.com , here is a classic Haystack recipe:
- 1¾ cups soda crackers, crushed
- 3 pounds hamburger, browned, and 3 tablespoons taco seasoning added
- 4 cups lettuce, shredded
- 3 medium tomatoes, chopped
- 2 cups green peppers, chopped
- 1 large onion, chopped
- Spaghetti, rice, or both — cooked until soft — enough to suit.
Instructions
- Put some of each on your plate, one layer at a time. Top with shredded cheese or a homemade cheese sauce. Also, salsa or ranch dressing is a good addition.
- This will serve a family of six, but amounts can be adjusted to suit your taste and other vegetables can be added.

PENNSYLVANIA DUTCH COOKING
This looks like an amazing cookbook to have and I am tempted to buy one. What makes this book so fascinating and probably a treasure is it was printed in 1936. When you start getting cookbooks that far back, you really are entering a culinary and cultural time-capsule and the recipes are probably so authentic, so farm-to-fork. This book likely captures pure Amish/PA Dutch cooking before the tourist trade caught wind of it and kind of changed it.

I collect cook books and this is a great addition, many recipes are usable in our modern ways and the rest ( build the fire in the oven ...) are just plain entertaining to read. Also has a lot of great Amish/ Englisher poems and writings.
