    This Big Montana Beefy Rice Casserole recipe originates from the Amish community in Rexford, Montana and was given to me when I visited about 10 years ago.

    One of the best times for an outsider to visit this community is durng their annual school house auction. That just occurred a few weeks ago, and here you can buy quilts, farm equipment, odds and ends, and I think probably one of the biggest appeals is the food.

The Hispanic population has grown extensively in rural America (which also happens to be where you find the Amish), so foods like homemade salsas, quesadillas, and burritos are now commonly found in Amish kitchens.  All in the ingredients you need for a good homemade salsa are ones most Amish homemakers would cultivate in their garden anyway, so why not?
