When I was growing up, we used all sorts of nuts to make "peanut" brittle. We also used a variety of nuts (sometimes combined) when we made homemade biscotti, which was out Christmas favorite, My favorite kind of brittle was made with pecans or cashews. I want to make everything I see these days!! You can tell it's holiday season, having just finished Thanksgiving and now waiting for Christmas. I am making Corned Beef and cabbage (with potatoes and carrots) for the holiday at my son's home. Making it 3 different ways because the kids might not like corned beef, I don't know. I'm making one batch of regular, one batch of just potatoes, carrots and cabbage (with a beer poured over the top and a dash of Worcestershire) and one batch of potatoes, cabbage, carrots and Lil' Smokies in case the kids want meat but don't like the corned beef. With 11 kids in one household, we should have no trouble getting rid of all the food. I'm also making 3 Buttermilk pies, 2 batches of corn bread squares (without the whole corn) and my famous Pistachio salad with mandarin orange pieces, whipped cream on top and maraschino cherries in the whipped cream. I love busy days of cooking!
