I’ve been perusing through a new cookbook I received in the mail today.  The book is compiled by Freda Yoder, wife of the Amish bishop in Inola, Oklahoma, a relatively small Amish settlement in the Sooner State. The book is packed full of delicious regional recipes, and some old favorites.  Wow, this pie recipe sounds decadent – and easy – to make.  Yum!  I’ll share more recipes in the days ahead and information about how you can get this great book.

1 /3 cup cocoa

1 /3 cup cornstarch

3 cups milk

1 1 /2 teaspoons vanilla

1 1 /4 cup sugar

1 /4 teaspoon salt

3 tablespoons butter

Heat milk to boiling, except 1/2 cup. Combine sugar, cocoa, cornstarch, and salt; then stir in 1 /2 cup of milk.  Then add to hot milk stirring constantly till boiling.  Remove from heat, add butter and vanilla.  Cool and put into baked pie shell. Cool and top with cool whip.
