I really love this recipe. So if you’re hankering for an easy, sweet snack as you watch the election returns come in tonight, how about trying some homemade honey bars?  Note the “mayonnaise” listed as a glaze ingredient. That isn’t an error, it really does make for a creamy, sweet glaze on top of these soft, moist honey bars.  As the photo accurately shows, the bars do come out relatively thin, but what they lack in thickness they make up for in taste. Enjoy!

                     1 cup sugar

                     2 Cups flour

                     1 teaspoon baking soda

                     1 1 /4 teaspoon cinnamon

              Blend together

                     1 egg lightly beaten

                     ¾ cup vegetable oil

                      ¼ cup honey

                      1 cup nuts

Mix all at once, put in ungreased jelly roll pan, I used a 9×13, if you can find 12×15

Bake 20 minutes at 350.  As soon as it comes out of the oven spread glaze on top.

                       GLAZE

                 1 cup powdered sugar

                 1 teaspoon vanilla

                 1 tablespoon water

                 2 tablespoons mayonnaise

These look yummy! Quick question though. With the mayo in the glaze, leftovers (assuming there are any lol) would have to be kept in the fridge?

    • Jill, good point…yes, there are rarely leftovers with these:), but store in a sealed container in the fridge and enjoy the next day!

OK,Jill..I will take your word and give these a try..just as soon as the pumpkin bars are gone!! We have local honey to use. A friend of our son’s puts some of his hives here on the farm in the summer. In return,we get honey!

  3. I have been making these for several years when the children and grandsons come to visit….still one of their favorites they expect when they walk in the door at our house!!! And they keep really well, if you do not have my sons and grandsons here….

  4. And I have found that these come out better out of the pan if you just use a glass 9×13 and do not overbake!!
