There are a lot of similarities between Amish and Shaker cooking. Both styles originate from a simple, scratch tradition. The difference is that Shaker cooking tends to incorporate a lot more herbs and does, as a rule, skew healthier than Amish menus. Shakers were the original locovores, harvesting, foraging and cooking from what they had immediately on hand. While the Amish were seduced by the post-WW II processed food movement, the Shakers - who were dwindling in ranks by that time - were not.

- 1 cup elbow macaroni, uncooked
- 1 1 /2 cups hot milk
- 1 cup soft bread crumbs
- 1 1 /2 cups grated cheese (sharp cheddar, but you can use any kind)
- 2 tablespoons chopped pimento
- 1 tablespoon minced onion
- salt and pepper to taste
- 3 eggs, separated

- Cook the macaroni as directed on the package.
- Pour the hot milk over the crumbs and mix in the cheese, pimento, onion, seasonings, and egg yolks.
- Beat the egg whites until stiff and fold into the mixture.
- Add the macaroni
- Bake at 350 for 50 minutes.
