    5 Shaker Recipes: Shaker Macaroni Delight and More

    There are a lot of similarities between Amish and Shaker cooking.  Both styles originate from a simple, scratch tradition.  The difference is that Shaker cooking tends to incorporate a lot more herbs and does, as a rule, skew healthier than Amish menus.   Shakers were the original locovores, harvesting, foraging and cooking from what they had immediately on hand.  While the Amish were seduced by the post-WW II processed food movement, the Shakers - who were dwindling in ranks by that time - were not.

    • 1 cup elbow macaroni, uncooked
    • 1 1 /2 cups hot milk
    • 1 cup soft bread crumbs
    • 1 1 /2 cups grated cheese (sharp cheddar, but you can use any kind)
    • 2 tablespoons chopped pimento
    • 1 tablespoon minced onion
    • salt and pepper to taste
    • 3 eggs, separated

    ???? Instructions

    1. Cook the macaroni as directed on the package.
    2. Pour the hot milk over the crumbs and mix in the cheese, pimento, onion, seasonings, and egg yolks.
    3. Beat the egg whites until stiff and fold into the mixture.
    4. Add the macaroni
    5. Bake at 350 for 50 minutes.
