Authentic German Rivel Soup: This is a delicious one any time of year! I've run Amish rivel soup (I've seen it spelled rivvel also) recipes on this site before, but this is an authentic German-heritage recipe in its own right and it's fun to try different versions of different recipes. Asparagus-Potato Soup: Asparagus is a spring staple on Amish farms and this delicious delicacy is great in a soup: just like rhubarb, asparagus will come up year after year in the same patch, so its arrival is always a signal that winter is through. Once you get an asparagus patch started it is pretty hard to get rid of. A lot of people mow theirs down in the fall, but I leave ours alone. I think it makes for stronger roots that will grow better in the spring. Most of our children like fresh asparagus when it is part of a casserole, for instance. If I just cook it and put cream over it, some of the children don't care for it. But we usually make them taste something that they may not want to try, because sometimes they are surprised and really enjoy a new food. Best-Ever Pot Roast: This is a delicious one, here is a bit more about it: One thing I have in common with Amish and Mennonites: many memories of dishes like this "Best-Ever Pot Roast." I have so many memories from my childhood of my grandma simmering a “rump roast” in the oven, or my Mom slicing potatoes and carrots and sticking a pot roast in a Dutch oven, crock pot, or deep cooking pan. Brethren Brown Sugar Pie: if you want to really mix things up a bit this is a winner you might want to try: brown sugar pie. This is a classic "Plain pie", coming from the scratch traditions of the Amish and Brethren church. The ingredients in this pie are probably ones you already have in your pantry and, wow, does it make a great pie! The top layer is slightly crispy/firm, encasing a sweet custardy consistency beneath.
