Fresh corn is a summer staple in Amish kitchens because of its relative ease of cultivation and versatility. Corn muffins, anyone?
This is a really easy recipe that I enjoyed for lunch today. It's out of the Amish Cook archives and really is meant to be used for fresh corn on the cob, but, heck I used 15 ounce can of corn instead of the ears.

is a lemon meringue pie, but for those of you who don't care for meringue or just don't want to go through the trouble of making it, this pie would be superb as a stand-alone lemon without the meringue. But the meringue is a nice touch, so don't get intimidated by the meringue.
Lemons, by the way, are a fruit that manages to find its way into Amish communities despite being very non-native. Lemons ship relatively well and have long shelf lives, so it's not unusual to have crates of lemons being sold in Amish-owned groceries. Lemons are used for flavorings, lemonades, and, yes, pies!
