I had to look up what au gratin even means, and it is a French (I figured) term referred to grated. So au gratin potatoes use grated potatoes. Although in this case, the potatoes are sliced, so this recipe is an example of how a recipe name can stay the same but the instructions evolve far from its original meaning.

Most versions are baked in the oven, but this version, which is popular in the Amish Cook's kitchen, is made on a stove-top. So you get a little bit different of a flavor profile with this super recipe!
❓ Why Are Stovetop au Gratin Potatoes Popular?
Well, this is an easy dish to make and because it can be made on the stovetop, if you are an Amish person in the summer without air-conditioning, it's nice not having to turn on your oven. Other qualities about this recipe that are loved:
- inexpensive
- easy to make
- easy to double or triple proportions to feed a crowd
- easy to spoon into a sealed container and transport.
📜 The Amish and Potatoes
Many Amish grow their own potatoes. Yes, the Amish communities in Maine really grow them since conditions there are so ideal for potatoes. But I've seen Amish people in places like Michigan, Indiana, and Ohio growing potatoes. Just all depends on how sandy your soil is and your local conditions.
Some of the top Amish communities for growing potatoes:
- Unity, Maine
- Rexford, Montana
- Centreville, Michigan

What kind of cheese and how much??

You can never go wrong with cheddar. Buy a block and shred it yourself. It melts much better. No anti-clumping agent, aka sawdust.
