Who says frosting always has to be plain buttercream? Sometimes an occasion calls for something different. And a great way to add a summery flair to a picnic cake is to cover it in a delicious blueberry frosting. And this recipe is easy - and delicious.

🫐 The Amish and Blueberries
Blueberries are a favorite fruit among the Amish. They are relative easy to grow, are suitable to many climates, and once grown blueberries are used in many ways, among them:
- jams
- breads
- spread on pancakes
- pastries
But another way to use them is to incorporate them into a nice fluffy frosting!
📋 Step-by-Step Amish Blueberry Frosting
This is a very easy frosting to make. Start with a couple of 9-inch white cakes (but you can make the frosting for whatever you choose, I just like this on a white cake)

Then you start on the frosting, which is really easy to make.

Blueberries and blueberry juice are both key ingredients for this recipe.

Not the best photo in the world, but I took this one as I used an electric mixer to beat the frosting.

Spread onto a cooled cake. Use cornstarch to thicken to your satisfacton. The fresh blueberries in the recipe will not "puree", so you'll have blueberry lumps throughout. If you don't want the blueberry chunks just leave them out of the recipe and use only the juice.

Spreads onto both cakes and stack on top of one another for a delicious layer cake.

Best-Ever Blueberry Frosting
Ingredients
- 3 cups powdered sugar
- 1 ½ sticks of butter
- 1 ½ cups of blueberry juice
- 1 cup fresh or frozen blueberries
- 1 teaspoon vanilla
- cornstarch as needed
Instructions
- Cream the butter and powdered sugar.
- Beat butter and powdered sugar with an electric mixer
- Stir in blueberries and resume beating on high speed
- add vanilla
- thicken with cornstarch if needed
- Chill frosting in the refrigerator for one hour and then spread with spatula onto cooled cakes
