    Amish Brown Sugar and Garlic Chicken

    Among the Amish, chicken - like this Amish Brown Sugar and Garlic Chicken -  is a dietary staple.  It's plentiful, versatile, and easy to fix.  The brown sugar in this recipe gives a bit of a sweet-savory spin to the chicken. This recipe calls for 8 cloves of garlic, some of you may want to tone that down if you find that much too much.  Fun flavor combinations like brown sugar and garlic are not uncommon on Amish farms. I mean,  the Amish may not be known for being super-expressive, so the one place where they can be creative is in the kitchen.

    START WITH FARM FRESH!

    Amish cooks generally have a  ready supply of farm-fresh chicken.  The chickens live much different lives than their factory-fed cousins.  Chickens on Amish farms generally enjoy a large barn and lush grass.   The meat from this type of farm-fresh chicken is much more moist and flavorful than chicken found in the freezer at the supermarket.
    So our best advice to you in trying any of the chicken recipes on Amish365 is to use the freshest, farmiest (made up a word) chicken you can find.  The enhanced flavor will find its way into the meal.
    This recipe comes to me from an Amish woman in Iowa, where chicken is plentiful and the farms are passed down through the generations.

     

     
    Gather your ingredients


    Again, start out with fresh, farm-raised chicken if you can, like you see in the above photo.

    Your house will smell like garlic!


    The extra virgin olive oil is a great choice for browning the garlic,but you could use canola oil also.

    Nicely baked in the oven....


    The above is an electric oven, which is found in most non-Amish homes. But most Amish homes still use kerosene for cooking, some of the most conservative Amish still use mainly woodstove for cooking, which would give the chicken a "smokier" flavor.

    Delicious!


    Again, tone down the garlic if you wish. 

    🍗 Amish Brown Sugar and Garlic Chicken

    • 6 boneless skinless chicken breasts OR 6 split breasts
    • 8 cloves of garlic, minced
    • 8 tablespoons of brown sugar
    • 2-3 TB Extra virgin olive oil
    • salt and pepper to taste

    📋 Instructions

    1. Start by mincing the cloves of garlic and toasting in a small saute pan with extra virgin olive oil. When the garlic is light brown, remove from the pan and put into a small bowl.
    2. Let the garlic cool a few minutes and then mix in the of brown sugar.
    3. Add salt and pepper and toss to combine.
    4. Then place the chicken breasts in a baking dish.
    5. Then simply sprinkle the brown sugar and garlic mixture over the chicken.
    6. Roast chicken on 450 degrees for 30 minutes or until juices run clear.
    7. While the chicken is cooking the brown sugar will become very bubbly.
    8. When the chicken is done, let it rest in the pan for several minutes before serving
