Apple pie is as American as, well, apple pie. There are so many variations on the recipe, but they all share similarities: diced apples, some sugar, maybe some cinnamon, and on and on.

My daughters wanted to make pies yesterday, so I thought why not? I got them started with the crust, using this easy make-in-the-pan pie crust. They asked if we were going to make our own crust or use store-bought, I told them there’s really no reason to use a store-bought crust when you’re making an in-the-pan crust. I mean, I guess you save a little time using a frozen crust but not much. I told them that we would have crust made within 15 minutes, and, sure enough, after some stirring and patting and pinching, both of them had pat-a-pan pie crusts done in 15 minutes exactly. I can make them faster, but I was pleased with their progress. Once you make one of these a time or two, you can probably do it in 5 - 7 minutes, not that it is a race...
We were looking at two apple pie recipes, but one of them had a “caramel “component to it… And that is what Aster wanted. So we made that pie. Really, the most difficult part about this pie is just sitting and dicing up the apples. Once you do that the rest is, well, easy as pie.
My daughters asked me where the expression “easy as pie “came from… Because he said pies difficult… But, as these pies show us, it really isn’t difficult.
The recipe came from a Mennonite cookbook and is, once you get past the dicing, super simple.
We used a blend of Fuji apples and Honeycrisp. Six apples turned out to be too many, 4 - 5 was about right.
My eight-year-old did the whole pie herself, except for the cutting and dicing of apples. Well, actually I also ended up doing the part at the stove, but she did most of the work!
We used this easy Amish pat-a-pan pie crust recipe.
She did a nice job with the crust. The recipe says 1 hour baking time, but do monitor it. We used my parents convection over and it baked faster which overdid the crust. So I'd start checking at 30 minutes depending on the oven.
The recipe gives a vague instruction to use a top pie crust or a crumb topping. We just did a quick crumb topping of equal parts brown sugar, flour, and butter and that worked out well. And, buy the way, the "caramel" in this recipe isn't your classic caramel, but the sugar, butter, cornstarch, etc makes a sort of "mock caramel", it is really is delicious!

- 4 -6 baking apples
- 1 teaspoon lemon juice
- ¾ cup water
- ½ cup sugar
- 2 tablespoons cornstarch
- pinch of salt
- 2 teaspoons cinnamon
- 2 tablespoons butter

- Peel and slice apples.
- Stir in lemon juice.
- Combine dry ingredients and water and bring to a boil while stirring in a saucepan. Add butter to the thickened mixture and stir over apples.
- Pile into an unbaked 9 or 10-inch pie crust and cover with crumb topping or a top crust.
- Bake at 350 for about one hour.
