On a recent Sunday morning I had a craving for crisp syrupy waffles, but our waffle iron is stored away somewhere and I couldn't find it. You can improvise and do waffles in a grill pan but I couldn't find that either. Regular pancakes just didn't sound that appealing to me, so I started thinking of pancakes with a twist. Our 3-year-old loves anything having to do with chocolate (who doesn't?), so that made me think of "chocolate pancakes." I did some research online and, sure enough, chocolate pancakes are a thing. Here are some, SIGH, you know the photos at that type of blog are outstanding any my wife gets on me about the less-than-perfect photography I usually end up with...but...I don't know, each blog reflects the personality of its owner and I don't know if that sort of photography - as good as it is - is really "me." But Amish365ers do deserve the best, so I know I need to possibly examine the issue of upping my photo game.
The chocolate pancakes on the blog I found were more complicated than I wanted and I can't just rip off someone else's recipe anyway. So I just found an Amish pancake recipe in my archives and adapted it to make it chocolatey.....The pancakes have a pleasant chocolatey smell and I will say that the pancakes were very good...I was worried that the chocolate flavor would be too muted, but it was just right. Our 6-year-old thought the pancakes looked "burnt" at first, but that was just the rich, darker flavor infused by the cocoa. I enjoyed the pancakes with butter and maple syrup, although I guess I could have used chocolate syrup...that just seemed like it would have been overkill (but maybe not!)
Use fresh eggs and let the kids crack them...

The chocolate pancakes frying..SIGH this is where other blogs do a much better job with photography than mine, you have obvious shadows...but, geez, if you are trying to do this with a 3 and 6-year-old running around the kitchen, it's tough to have professional-grade photography.
I love the rich, deep chocolate color of the pancakes...

Enjoy with butter and maple syrup or...chocolate syrup!
- 2 beaten eggs
- 2 cups sour milk
- 1 teaspoon soda
- 1 /2 cup cocoa
- 2 1 /4 cups flour
- 2 teaspoons baking powder
- 1 teaspoon salt
- 4 tablespoons melted butter
- 2 teaspoons sugar
- Beat eggs until light.
- Add milk.
- Sift flour with baking powder, cocoa, salt and sugar.
- Beat flour mixture into egg and milk mixture.
- Add melted butter.
- Beat until smooth.
- Make in hot iron pan.
- Serve with hot maple syrup and sausage.
