    Decadent Amish Chocolate Pancakes

    On a recent Sunday morning I had a craving for crisp syrupy waffles, but our waffle iron is stored away somewhere and I couldn't find it. 

    I love the rich, deep chocolate color of the pancakes...

     You can improvise and do waffles in a grill pan but I couldn't find that either.   Regular pancakes just didn't sound that appealing to me, so I started thinking of pancakes with a twist.  Our 3-year-old loves anything having to do with chocolate (who doesn't?), so that made me think of "chocolate pancakes." 

    I did some research online and, sure enough, chocolate pancakes are a thing.  The chocolate pancakes on the blog I found were more complicated than I wanted and I can't just rip off someone else's recipe anyway.  So I found an Amish pancake recipe in my archives and adapted it to make it chocolatey.

    The pancakes have a pleasant chocolatey smell and I will say that the pancakes were very good .I was worried that the chocolate flavor would be too muted, but it was just right.   Our 6-year-old thought the pancakes looked "burnt" at first, but that was just the rich, darker flavor infused by the cocoa. 

    I enjoyed the pancakes with butter and maple syrup, although I guess I could have used chocolate syrup...that just seemed like it would have been overkill (but maybe not!)

    How To Make Chocolate Pancakes

    Chocolate pancakes can be as elaborate or as simple as you want them. I mean, the simplest way to make them is simply to take your favorite pancake recipe and add some cocoa to them. Extra points for using high quality cocoa brands and adding some chocolate chips or chocolate syrup to the batter.

    Use fresh eggs and let the kids crack them...

    Start with a large bowl and decide ahead of time what type of chocolate you are going to use: unsweetened cocoa powder, milk chocolate, dutch-processed cocoa powder. Whatever chocolate you want, get it out ahead of time. Oooh, some nutella in this would also be amazing.

    You'll want to crack the eggs into a big bowl, then comes the milk and the dry ingredients.

    This is where you dump the dry into the wet ingredients and choose the chocolate you want to add. The recipe calls for 1 teaspoon salt, but you can add one more teaspoon if you like that sweet-salty stuff. You can some chocolate syrup or chocolate sauce here. As far as pancake batters go, this is really easy to work with. Another ingredient, in retrospect, that I might add here is a teaspoon or two vanilla extract. A tablespoon or two of peanut butter would be amazing too and give a nice marbled pattern to the pancakes, but you don't want the batter too thick.

    Butter a skillet...

    Use melted butter or nonstick cooking spray to prepare a skillet or griddle for the pancakes! Or use a large non-stick skillet.

    The chocolate pancakes frying..

    I did it over medium heat. Flip the pancakes when you start to see bubbles forming in the batter. Either just pour the patter onto a griddle or scoop out with a measuring cup to make the pancakes.

    After they come out of the frying pan, you can put these on a baking sheet and stick in a 350 degree oven for about 10 minutes IF you want a slightly crispier pancake.

    Enjoy with butter and maple syrup or...chocolate syrup!

    You could serve with fresh blueberries, strawberries, or bananas. All of those pair well with chocolate. While you are at it, fold some fresh whipped cream on top! Or sprinkle on some chocolate chips or, if you are so inclined, white chocolate chips. Either way, these pancakes are a chocolate lover's dream!

    • 2 beaten eggs
    • 2 cups sour milk
    • 1 teaspoon soda
    • 1 /2 cup cocoa
    • 2 1 /4 cups flour
    • 2 teaspoons baking powder
    • 1 teaspoon salt
    • 4 tablespoons melted butter
    • 2 teaspoons sugar

    📋 Instructions

    1. Beat eggs until light.
    2. Add milk.
    3. Sift flour with baking powder, cocoa, salt and sugar.
    4. Beat flour mixture into egg and milk mixture.
    5. Add melted butter.
    6. Beat until smooth.
    7. Make in hot iron pan.
    8. Serve with hot maple syrup and sausage.
