Father's Day is one of those secular occasions that some Amish will observe and others will just let pass. The day is probably less celebrated among the Amish than Mother's Day because by the time June rolls around schools are out and the little homemade cards or projects that the kids might make in school to bring home aren't going to happen. But food will happen! Eating is a favorite among Amish Dad's during the summer, whether it is Father's Day or some other summer Sunday, so I thought I'd throw together a few recipes from the archives that might be appealing to all of you on this day to celebrate Dads!
- 1 cup of brown sugar
- ½ cup shortening
- ½ cup peanut butter
- 1 egg
- 1 tsp. vanilla
- 1½ cups flour
- 1 tsp. baking soda
- ½ cup oatmeal
- Frosting:
- 2 tbsp. butter
- 2 tbsp. peanut butter
- 1½ cup powdered sugar
- dash salt
- 2½ tbsp. milk
- Mix ingredients together. Press into a 10x15 pan.
- Bake at 375 for 6-7 minutes.
- Mix frosting in a saucepan, cook until thick and creamy.
- Frost bars while still hot. Cool and serve
- 3-4 lb. beef roast (sirloin tip, rump, English cut)
- 1 tbsp. oil
- ¼ c. soy sauce
- 1 c. coffee
- 2 bay leaves
- 1 garlic clove, minced
- ½ tsp. oregano
- 2 onions, sliced
- Sear roast in 1 tablespoon oil on all sides in heavy Dutch oven.
- Pour sauce over meat.
- Put half of onions on meat, the other half in sauce.
- Cover and roast 4-5 hours at 325 degrees.
- 1¼ pt. vinegar
- 1 pt. water
- 1 stick margarine
- 6 tablespoon salt
- 4 teaspoon garlic powder
- 3 teaspoon pepper
- 7 tablespoon worcestershire sauce
- chicken pieces
- Combine all ingredients, except chicken, in dutch oven.
- Bring to a boil, then add chicken.
- Cook for 20 minutes.
- Refrigerate overnight.
- Next day, bring to boil again.
- Grill using liquid to baste.
- 2 tablespoons hot bacon fat, butter, peanut or olive oil
- 1 teaspoon sea salt (scant or, to taste)
- ⅛ teaspoon pepper
- ½ cup hot vinegar
- ½ onion, finely sliced
- 1 teaspoon dry mustard
- ½ cup cream, plain yogurt, milk, sour cream or water
- 1 tablespoon sugar
- Dissolve the sugar in the cream, yogurt, milk, sour cream or water.
- Combine with the remaining ingredients.
- Mix hot salad dressing with any
- favorite salad ingredients or wilted baby salad greens and serve while still
- slightly warm.
