    Amish Summer Slaw

    This Amish summer slaw recipe comes to us from Adams County, Indiana and is steeped in tradition.   The apples combined with the cabbage give the dish a nice summer-autumn flavor.  I'm not a huge Cole slaw fan, but I do grudgingly like this dinner slaw. I remember tasting this recipe a time or two years and years ago in the Berne, Indiana community.  Our recipe tester, Karen P, from North Carolina, tested the recipe for us and here's what she had to say about it:


    "This recipe put me in a festive holiday mood just looking at the colorful finished product!  It’s not the usual vinegary slaw; the touch of acidity here comes from lemon juice. The flavors are a mix of sweet and tart, beautifully blended in this healthy salad. No mayonnaise here, either; just a touch of (unsweetened) whipped cream binds the mixture.

    This delicious recipe just might become a new addition to my traditional Thanksgiving menu.  Five stars!"

    Slaws as a whole are popular in Amish settlements. Cabbage is a staple of most gardens and a favorite use for these heavy heads of tightly wound greens is a cole slaw. Some people spell it coleslaw while others do cole slaw, and sometimes it is capitalized as Coleslaw, which always looks weird to me. And, finally, an explanation for this odd name, according to the Chad's BBQ website:   the term coleslaw originates from the Dutch expression koosla, which means “cabbage salad.” SIGH, too many spellings. Maybe that is why I am not a slaw fan. In the grocery business they refer to it as a "wet salad."

    That is about as good of a review as you can get, so if you are searching for something for a Fourth of July picnic, summer gathering, or even your Thanksgiving table in the fall, this recipe fits the bill.

    • 1 small head of cabbage
    • 2 tart apples, chopped
    • 1 medium onion
    • 3 hard-boiled eggs
    • 1 /4 teaspoon of salt
    • 1 /4 cup lemon juice
    • 2 pimentos
    • 2 tablespoons of sugar
    • 1 teaspoon dry mustard
    • 1 tablespoon melted butter
    • 1 /2 cup of whipped cream

    📋 Instructions

    1. Shred cabbage and combine with apples, onion, and pimento.
    2. Grate egg yolks.
    3. Add salt, sugar, mustard, and butter.
    4. Add egg whites, chopped fine
    5. Stir in lemon juice, then add whipped cream and mix
    6. Chil and serve.

      I love cranberry sauce...I prefer the whole berry. Since I'm the only one who eats it, I found a gelled cranberry salad with cream cheese, raspberry jello, cool whip, walnuts and whole cranberry sauce. My husband loves it. BTW, we went to the store, this morning. Almost all of the carts were out...but, thankfully, they were sitting in the parking lot and did not indicate how many people were in the store...it wasn't bad at all.
