Nothing partners with turkey better than potatoes. Amish cooks are experts at throwing together massive potato dishes to feed a crowd. This is one of these classic Amish potato dishes that come into being in the post WW II convenience food boom. Certain Amish communities were heavily influenced by the convenience of canned soups and pre-made cheese.

This dish reflects that, but is delicious, and would be perfect to feed a Thanksgiving crowd. Thanks to recipe testing volunteer, Patricia, from Kentucky, for testing this for us and reporting that: "This makes a lot. It would make two 9 x 13 pans....very good dish. Great for big family gatherings!"
This recipe is actually Old Order Mennonite, comes from one of my favorite recipe sources, an old, no-longer published Mennonite cookbook.
📜 Step-By-Step Creamy and Cheesy Company Potato Casserole
This is a recipe, as the name implies, that is designed to feed a lot of peope, but you can halve the recipe if you need to feed a smaller group.
The recipe is made using very basic ingredients, and that is what makes this casserole so popular. But you can switch up the cheese with classic Cheddar, Monterey Jack, or even Swiss.
- Don't overcrowd the baking dish. If you pack the potatoes too tightly, they won't cook evenly.
- Use a variety of cheeses. Cheddar cheese is a classic choice, but you can also use other cheeses like Monterey Jack, Swiss, or Gruyère.
- Don't skimp on the butter. The butter helps to create a crispy, golden brown topping.
- Bake until the potatoes are bubbly and the topping is golden brown.

- You can add other ingredients to your company potatoes, such as chopped onions, bacon bits, or diced ham.
- If you want to make a vegetarian version, you can use vegetable broth instead of chicken broth and omit the bacon bits.

Creamy and Cheesy Company Potato Casserole
Ingredients
- 2 cans cream of celery soup
- 2 cans cream of chicken soup
- 1 pound Velveeta cheese
- 2 cups sour cream
- ½ cup butter, divided
- 2 teaspoons seasoned salt
- ½ teaspoon garlic salt
- 1 teaspoon pepper
- 10 pounds potatoes cooked, peeled, and drained
- 1 to 2 cups crushed Ritz crackers
Instructions
- Combine soups, cheese, sour cream, half the butter,seasoned salt, garlicsalt, and pepper.
- Cook until cheese is melted and smooth. Add potatoes.
- Mix well and pour into greased casserole dishes. Bake at 350 for 40 to 50 minutes.
- Melt rest of the butter and mix with crackers. Sprinkleonto potatoes when half done baking. Serves 25 to 30.

I have been enjoying getting many of these recipes. I had foot surgery 6 weeks ago and just started cooking again from the comfort of a desk chair on wheels (no weight on foot for another 2 months. I have had my husband take me to Holmes County do most of my meat(less fat and sodium used) and grocery shopping about every 2 weeks. I shop using a wheel chair for now, but it works.
