This is an old recipe from the Amish of Aylmer, Ontario. What makes this "pie" recipe unique is the "crust" which is made out of mashed potatoes. So this is a great way to use up those leftover mashed potatoes and have a hearty supper. Enjoy!
POTATO CHEESE PIE
Crust:
2 or 2 1 /2 cups leftover mashed potatoes
2 tablespoons flour
1 teaspoon baking powder
1 egg
2 tablespoons melted butter
Salt and pepper
Filling:
2 eggs
1 cup cream
Salt and pepper
3 /4 cup grated Velveeta cheese
Mix the ingredients thoroughly and pat into a large greased pie plate as if dough.
Beat the eggs, stir in cream and seasonings. Pour this into the potato crust and sprinkle the top with cheese. Bake at 350 for 20 minutes or until a knife inserted in center comes out clean.

This sounds delicious 😋. I would like to know if you form the dough up the sides of the pie plate like you do when making pie 🥧. Also, can you use a different cheese than Velveeta?

Yes, Bonnie, make the crust just like you would for a regular pie, pinch and press the dough all the way up the sides of the pie plate. And you can use something other than Velveeta. Velveeta is a good "melting cheese" so it has unique properties, but it is also a highly processed cheese. You can absolutely use a different cheese, you just won't get the same consistency, the trade off is you also won't get all the preservatives.
And I am no longer with the girls mother, although we try to co-parent effectively and keep things nice for them.
