This is an easy recipe that an Amish woman in Daviess County, Indiana gave me for homemade cornflake candy using peanuts from her own garden. I think this sounds good, I mentioned the recipe to my wife, Rachel, and she was less-than-enthralled at the sound of it. So you be the judge!:) Here is her recipe:
Daviess County One-Pan Peanut Cornflake Candy
- 1 cup sugar
- 1 cup light corn syrup
- 1¼ cups peanut butter
- 6 cups corn flakes
- 1 cup homegrown peanuts
- Combine sugar and corn syrup in a dutch oven.
- Bring to a boil.
- Remove from heat.
- Stir in peanut butter.
- Add corn flakes and peanuts and stir until all are coated with syrup mixture.
- Spread the mix out into a 13 x 9 dish and cut into squares.
- Let set before cutting.
O have made this manny tomes and it has always been a hit even though mine has never had peanuts included. . Feel free to use other flaked cereals like wheaties or rice flakes .
Yum, I bet those would be good with Wheaties!
