Easy Stovetop Chicken Spaghetti is one of these hearty, one-pot meals that are so popular in Mennonite kitchens this time of year. This comes from an old Mennonite cookbook of mine and my parents sampled the recipe the other night. My Italian heritage mom was skeptical of the dish that uses tomato juice and spaghetti in ways anathema to most Italians.
But by the time the meal was over she was bestowing it with rave reviews. So, a couple of things...as always, most Old Order Mennonite cooks would use the freshest chicken imaginable. And even the tomato juice and ketchup would probably be homemade. Can't overstate the difference using the freshest, homemade ingredients would make. Still, you can use store-bought stuff and it'll turn out just fine. Enjoy!
Cook until until tender. You can use a stainless steel, non-stick, or cast-iron skillet. It'll all turn out fine with whatever you choose to use!
Let the chicken simmer in the sauce for at least 30 minutes. While it is simmering, have a pot of spaghetti going. And feel free to add some Italian seasoning, oregano, or garlic powder to the mix.

- 2 pounds chicken
- 1 cup chopped onion
- 1 quart tomato juice
- 2 1 /2 cups ketchup
- 1 /2 cup brown sugar
- 1 teaspoon salt
- 2 tablespoons favorite barbecue sauce
- 1 tabpespoon prepared mustard
- 1 pound uncooked spaghetti

- Cook chicken and onion in a skillet.
- Add rest of the ingredients and simmer for 30 minutes.
- Cook and drain spaghetti.
- Combine with chicken and sauce and serve with grated cheese of your choice.
