Rice and the Amish a combination that people don't typically put together. I mean, yes, chicken and rice dishes are a dime a dozen in Amish kitchens. But rice has traditionally and historically been more associated with Asian than Amish. Still, as we've discussed on this site many times, some foods have been eagerly "adopted" by the Amish. We've seen the Amish co-opting foods like pizza, culinary trends like Tex-Mex, and, well, rice.
Rice is a natural fit among the Amish because it stores well and keeps well for long periods of time. It can be bought in bulk from Amish "Mom and Pop" stores who can order it in pretty easily from food brokers and wholesalers.
Rice is versatile and can be used to bulk up a dish during lean times. You can add seasonings and spices or just plain butter to it to make it better. Rice is popular among the Amish for the same reasons it’s popular in most of the world: it’s cheap, and just so flexible as a kitchen ingredient. I mean, you can see rice in virtually anything from main dishes to desserts like rice pudding.
Of course, you can’t grow rice on most Amish farmsteads. So it does have to be brought in. But rice holds up very well.
The rice is probably most commonly used in casseroles, it adds heft to the casserole, stretches out meat, and it’s just a great ingredient for that type of thing. But, you do find Amish cooks who just enjoy eating rice on its own, like this Fantastic Fried Rice This is a great fried rice recipe that first appeared in the Amish column back in 2014.
There is enough meat in this dish that you could easily at this as your main meal. Or leave out the meat and enjoy a veggie version. Use bacon and whatever other meat you'd like.
Fry it all together, the bacon drippings that you are frying it in will add extra flavor. This really is a super recipe!
You can add the cheese on top at the end and just sort of have a partially melted slice of cheese on top like pictured here, or you can add the cheese sooner, melted it fully, mix it in and have a cheesier rice. Totally up to you!
A lot of Amish Cooks love liquid smoke added to their recipes, so this is sort of an Amish twist on an Asian dish. You won't find liquid smoke in most Far Eastern kitchens!

- 8 ounces rice, cooked until tender
- 1 /2 pound meat of your choice
- 1 /2 pound bacon, fried or crumbled
- 2 green peppers, sliced or diced
- Chicken seasoning
- Liquid smoke
- Worchestershire Sauce
- Salt and pepper to taste
- Cheese of your choice

- In a 10-inch skillet sautee peppers and onions in bacon drippings.
- Extra butter may be added if desired.
- Add cooked rice, meat, and seasonings.
- Stir and fry together until hot.
