    Friday Fun: 3-Ingredients Cake Mix Cookies

    Even Amish cooks need a shortcut from time to time.  Yes, Amish cooks are well-known for their from-scratch cooking and baking.  And my best memories from Amish kitchens over the years have been watching bread made from scratch or cookie dough taking shape.  But items like box cake mixes, pop (soda) and chips are increasingly common in Amish diets.   This is a recipe that ran on amishcookonline (the forerunner to Amish365.com) back in 2007.

    This isn't an Amish recipe per se, but I've met an Amish cook or two that uses the recipe.   But, yes, most Amish cooks are still "scratch bakers" and those are the recipes we'll continue to focus on here at Amish365.com, but it's Friday, gotta have a little fun!:)

    bettycrockerAt the time one of our readers reported making a similar cookie  with a spice cake mix, a can of pumpkin puree, and some mini chocolate chips.   Another reader reported great results using triple fudge cake mix in the recipe below.A reader who tried this recipe described them at the time as very delicious with a moist, fudgy center.

    Friday Fun: 3-Ingredients Cake Mix Cookies

    Ingredients
    • 1 package dark chocolate or devils food cake mix
    • 2 eggs
    • ⅓ cup oil
    Instructions
    1. Mix all the ingredients in bowl; the cookie dough will be rather stiff.
    2. Shape into golfball sized balls, then flatten slightly and place on lightly greased cookie sheet.
    3. Bake at 350 for 8-10 minutes, then cool on wire rack.

      It sure looks as if there was a 4th ingredient in this recipe! Maybe chocolate chips?

        Dorothy, there is not a fourth ingredient, that is just a stray extra bullet.
