    Impossible Pie and Amish Crazy Quilt Pie

    Amish Crazy Quilt Pie is something you'll occasionally find in an Amish restaurant or, if you are really lucky, an Amish home.  I've only one across it once in over 25 years of exploring Amish communities and that was in an Amish bakery in Holmes County, Ohio.

    There is also a pie out there called "Impossible Pie" that mirrors the Amish Crazy Quilt Pie fairly closely.  Our friend Jessica made this pie and said you like custard you'll love this pie. Jessica jazzed it up a bit with some chocolate chips sprinkled on top, something I'd definitely do!

    What is there not to like? Chocolate chips and coconut go together great!

    This is a photo of Impossible Pie, which mirrors closely the Crazy Quilt Pie

    IMPOSSIBLE PIE

    2 cups milk

    3 /4 cups sugar

    1 /2 cup flour or Bisquick

    4 eggs

    1 /4 cup butter or oleo

    1 1 /2 teaspoons vanilla

    1 cup flaked coconut

    Combine all ingredients except coconut in blender for 3 minutes at low speed.  Pour into greased 9" pie pan.  Let stand 5 minutes.

    Sprinkle coconut over and bake for 40 minutes.  Serve warm or cold.

    AMISH CRAZY QUILT PIE

    • 2 cups milk, may use lower fat
    •  4 large eggs
    • 1⁄2 cup all-purpose flour
    •  1 cup sweetened, flaked coconut
    • 1 cup granulated sugar
    • 1⁄2 cup  butter, room temperature
    • 1⁄2 teaspoon salt
    • 1 teaspoon vanilla extract

    Place all ingredients into a blender, put blender on medium speed and count to ten --.pour into a 9" deep dish pie pan.during the baking process, the flour drops to form the crust.and the remaining ingredients will form the filling --.

    Bake at 350* for 45 minutes.

      My mom used to make the "Impossible Pie" all the times. She's been 12 years now. So I would say she probably started making it about 25 years ago. Everyone LOVED (except me, I don't like coconut) it! So easy to make.
