    Mom's Meatloaf

    Meatloaf is an old standby in all kitchens, Amish or non.  One of the most popular recipes on Amish365 over the years has been a recipe for Amish Marriage Meatloaf.   

    Amish cooks will often keep a good supply of ground hamburger on hand for use in patties and loaves.  Simply mixing up some meat, adding some eggs, and seasonings is perfect for an easy, filling supper.

    The ketchup on top is a colorful, traditional touch.

    A lot of Amish recipes call for oats in their meatloaf, something Mom isn't too fond of.  Oats add a little bulk and they were often stirred into ground beef to make it stretch further.  It also bulks up the meatloaf a bit, I like the addition of oats to meats, but not everyone does.  In fact, you can make a veggie meatloaf largely out of oats and eggs.  So how does my Mom make meatloaf?  Very basic recipe.  How does your own recipe compare?

     

    Mom's Meatloaf

    Cook Time 40 mins
    Total Time 40 mins
    Servings 1 loaf

    Ingredients
      

    • 1 pound ground chuck
    • 2 eggs
    • 1 cup Italian bread crumbs
    • 1 /2 cup Parmesan cheese
    • salt and pepper

    Instructions
     

    • Make into a loaf and place into a loaf pan and top with ketchup.
    • Bake at 350 for about 40 minutes until brown.

      It looks like there's chopped onion in the meatloaf in the picture but it isn't in the list of ingredients. Is this a mistake or simply an option that can be added to the basic recipe?

        Good eye, Marilyn, I checked with my Mom just now and it does half a chopped onion, I'll add it to the recipe!
