    Mom's Meatloaf (Only 5 Ingredients!)

    Meatloaf is an old standby in all kitchens, Amish or non.  One of the most popular recipes on Amish365 over the years has been a recipe for Amish Marriage Meatloaf.

    Amish cooks will often keep a good supply of ground hamburger on hand for use in patties and loaves.  Simply mixing up some meat, adding some large eggs, and seasonings is perfect for an easy, filling protein-packed supper.

    What Kind of Meat is in Meatloaf?

    Any kind! We think of meatloaf as your standard ground chuck or ground beef, but Amish cooks love to blend a variety of meats together: ground beef, venison, sausage, turkey, and even and ham. Ground beef is usually the "main meat", but others will be blended in to help stretch the supply of beef.

    What is Mom's Meatloaf?

    Simply put, the Amish are prolific recipe passers. Mom's recipe was passed down from her mom who got it from her mom who got it from her mom and on and on. These become treasured recipes!

    👩‍🍳 Making Mom's Meatloaf

    Mixing up the ground beef...

    Use a large bowl so you have plenty of room to work up the meat mixture. My Mom's classic meatloaf recipe has exactly 5 ingredients. Hard to improve upon that for speed and simplicity's sake. But, certainly, if you wish to add more "stuff" to the recipe, this is the place to do it. Perhaps a couple of tablespoons of brown sugar, worcestershire sauce, some garlic, chopped bell pepper, parsley, thyme, mustard, anything to add some flavor. But this recipe also works just fine by sticking to the 5 ingredients!

    Form into a loaf...

    Shape into a loaf, pour a simple sauce over the top, put onto a prepared pan and pop into the oven. The sauce is just a some ketchup and brown sugar. Stir in a small bowl and slather some over the loaf before baking.

    The ketchup on top is a colorful, traditional touch.

    A lot of Amish recipes call for oats in their meatloaf, something Mom isn't too fond of.  Oats add a little bulk and they were often stirred into ground beef to make it stretch further.  It also bulks up the meatloaf a bit, I like the addition of oats to meats, but not everyone does.  In fact, you can make a veggie meatloaf largely out of oats and eggs.  So how does my Mom's Meatloaf (Only 5 Ingredients!) compare to your own recipe?

    🥣 Ingredients

    • 1 pound ground chuck
    • 2 eggs
    • 1 cup Italian bread crumbs
    • 1 /2 cup Parmesan cheese
    • salt and pepper

    📋 Instructions

    1. Preheat oven to 350.
    2. Make into a loaf and place into a loaf pan.
    3. top with ketchup.
    4. Bake at 350 for about 40 minutes until brown.

      It looks like there's chopped onion in the meatloaf in the picture but it isn't in the list of ingredients. Is this a mistake or simply an option that can be added to the basic recipe?

        Good eye, Marilyn, I checked with my Mom just now and it does half a chopped onion, I'll add it to the recipe!

      Which kind of parmesan do you use for this? The shredded in a package or the grated that comes in a plastic jar?

        You can use either, really. My Mom uses the kind in a can, but either would work!
