    Parmesan Chicken With Corn on the Cob

    UPDATED: This is a chicken recipe from an Amish woman in Kentucky.  Mrs. Miller is a bishop's wife in a small settlement in a rural part of the state. She sent it to me years ago and since my parents were planning to have chicken for dinner one night this week anyway, it seemed like now was a good time to try this simple, hearty Amish parmesan chicken recipe.

    For some reason, when I think of "Parmesan chicken" I think of it as having tomato sauce with it, but this Amish Parmesan Chicken recipe doesn’t call for that. The Parmesan part of this recipe is just the cheese. Because Parmesan cheese (Well, is it really Parmesan?) is so shelf-stable, you just buy it in those cylinder cans, it has become popular in Amish kitchens. You don’t even need to keep it in the refrigerator.  So recipes that call for Parmesan cheese have gradually caught on in Amish communities.This particular recipe isthe best chicken parmesan recipe I have run across and it is popular and a favorite because of its simplicity, but it is also full of flavor. You use chicken cutlets of any type although a chicken breast probably is best. And, oh yea, you could make this eggplant parmesan by swapping out the chicken for eggplant.

    Aster got in on the act also, helping to dredge and coat the chicken.  You can tell she's excited to help my Mom (Her "Nona") start cooking! Wow, I don't remember posting this video, but it's so surreal for me to see Aster at 3-years-old. She's just gotten so much taller, older, expressive, etc.

    In this recipe is basil, oregano, and garlic powder, those are three very common herbs and spices found in Amish kitchens. You don’t usually find a whole lot more than that, Amish cooking is known to be very flavorful, but not very spicy.

    My Dad is a pretty astute chicken critic but he proclaimed this to be very, very good.  So let's get started with some photos first and then the recipe.

    There is a lot you can do with this simple recipe. Instead of cracker crumbs you could use breadcrumbs or Panko bread crumbs. And serve this chicken parm on a bed of pasta. That is always a great way to enjoy this dish, although if you are watching calories, the pasta will add some. Mozzarella cheese can also be used in a pinch in place of parmesan or blended in. Also, feel free to brush the chicken with some marinara sauce or a squeeze of lemon juice. Make sure you spray the baking pan with some cooking spray.

    🍗 Chicken Parmesan Ingredients

    • 3 pounds chicken thighs
    • 3 /4 cup cracker crumbs
    • 3 /4 cup Parmesan cheese
    • 1 teaspoon basil leaves
    • 1 /2 teaspoon oregano
    • 1 /2 teaspoon garlic powder
    • 1 stick butter

    📋 Instructions

    1. Mix all dry ingredients.
    2. Melt butter in a 9 X 13 inch pan.
    3. Dip chicken pieces in butter and then coat with crumbs.
    4. Bake 60 minutes at 350.
