Corn is a staple of summer on Amish farms and there are so many ways to enjoy it: in puddings, salads, sides, and more. Man, I love a scalloped corn. I could eat it as a stand-alone meal. Mmmmmm.
This delicious-sounding summer recipe comes to us from Gloria Yoder’s Mom, Dorcas Raber. Reader Barbara tested this recipe for us and had this to say:
“ So, so easy to make, did not have fresh corn so used frozen. Baked it along with some other things and was done perfectly. Mr said this is delicious and not to change the recipe at all!”
Sounds and looks great, so if you want an excellent way to enjoy summer corn, here you go!
