Corn is a staple of summer on Amish farms and there are so many ways to enjoy it: in puddings, salads, sides, and more. Man, I love a scalloped corn. I could eat it as a stand-alone meal. Mmmmmm.
This delicious-sounding summer recipe comes to us from Gloria Yoder's Mom, Dorcas Raber. Reader Barbara tested this recipe for us and had this to say:
" So, so easy to make, did not have fresh corn so used frozen. Baked it along with some other things and was done perfectly. Mr said this is delicious and not to change the recipe at all!"

A delicious, final plated product!
- 2 cups corn
- 2 eggs, beaten
- 1 cup milk
- 2 /3 cup bread or cracker crumbs
- 1 tablespoon onion, minced
- 3 tablespoons butter, melted
- ½ teaspoon salt
- ¼ teaspoon pepper
- 1 tablespoon sugar
- Mix altogether and bake at 350 for 40 minutes.
