Here are some favorite Amish camping recipes!
OVERNIGHT COLE SLAW
12 cabbage, shredded
1Â red bell pepper chopped fine
1Â green bell pepper chopped fine
2Â carrots shredded
1 cups sugar
Dressing:
2 tsp sugar
1 tsp dry mustard
1 tsp celery seed
1 cup vinegar
1 tsp salt
¾ cup vegetable oil
In a large bowl, combine first four ingredients. Sprinkle with sugar; set aside. In a saucepan combine dressing ingredients, bring to boil. remove from heat and pour over vegetables, stir to cover evenly. Cover and refrigerate overnight, take to your camping trip the next day!
CAMPING SKILLET CORNBREAD
1 cup
all-purpose flour
1 cup
white or yellow cornmeal
1 tablespoon
sugar
2 teaspoons
baking powder
1 teaspoon
baking soda
1
4 teaspoon salt1 cup buttermilk
1
3Â cup butter, melted2 large ggs, beaten
1 tablespoon butter
- Heat oven to 400°F.
- Combine flour, cornmeal, sugar, baking powder, baking soda and salt in bowl. Stir in buttermilk, â…“ cup melted butter and eggs just until mixture is moistened.
- Melt 1 tablespoon butter in heavy cast iron or oven-proof 10-inch skillet. Pour batter immediately into pan. Bake 15-20 minutes or until toothpick inserted in center comes out clean. Serve warm.
