My parents have fixed salmon patties for as long as I can remember. I can remember many childhood suppers of salmon patties and they were also a staple at my grandma's house, especially during the Lenten season. So many wonderful salmon patty memories!
Salmon is surprisingly popular among the Amish. In fact, one of the reasons Amish families initially moved to Montana was the proximity to good salmon and other cold water stream fishing. I had the chance to talk to the first Amish person to settle in Montana and he was an avid sportsman and outdoorsman who loved to fish.
Amish fisherman enjoy catching salmon, trout, and bluegill to name a few. Cans of salmon are not uncommon to find in Amish bulk food stores also, so salmon patties for supper in an Amish kitchen is something you'd find. Of course, the Amish are not Catholic, so you won't find them observing Lent. But fish is still a popular dish, year-round.
Form into patties, and make plenty of them. These are filling and I always like to dip mine in something like ranch or mayo or some sort of dressing, just, well, I like to dip my food in stuff.
Salmon patties are a good fit in the average Amish kitchen because they don't have many ingredients.
Fry each side until golden brown. You can use a ceramic skillet like this, or stainless steel. But the gold standard in an Amish kitchen is cast-iron.

- 1-1 pound can of salmon
- 1 egg
- 1 tablespoon flour
- 3 /4 cup cracker crumbs
- 1 teaspoon chopped onion
- 1 tablespoon of lemon juice
- 3 /4 cup of milk

- Dump all ingredients into a large bowl.
- Mix well.
- Shape into patties.
- Brown both sides in a lightly greased skillet on medium heat before serving.

We had these this past week made differently. I use 2 cans pink salmon, clean out the bones and grayish skin. Put in a bowl add 2 eggs, 6-8 hand crushed saltine crackers and mix into patties. I cook in a skillet with a bit of oil, serve with brown beans (pintos), cornbread and ketchup. My Mom's recipe, I just need her cast iron skillet). Enjoy the memories.
