Okay, the recipe for these bars come from The Amish Cook and there are essentially two recipes here, one for the bars, one for the chocolate layer. The recipes were presented to me as "Healthy Bars" and "Healthy Chocolate." I am not sure, in the interest of public health information, endorse these as "healthy." But how about "healthier?"
Peanut butter, unless you get the pure natural kind, has a lot of sugar and honey and syrup, while not as processed, are still sugar. That said, this recipe is AMAZING. I thought these bars were so, so good I could have eaten the whole pan of them.

Somewhat Healthier But Still Amazingly Delicious Bars
Ingredients
- 2 cups oatmeal
- 1 cup peanut butter
- ½ cup honey
- ⅔ cup chocolate chips (opt)
- 1 tablespoon chia seeds (opt)
Chocolate Topping
- ½ cup coconut oil
- ½ cup cocoa powder
- ½ cup peanut butter
- ⅓ cup maple syrup
- ½ teaspoon salt
- 1 teaspoon vanilla
Instructions
- Mix altogether
- and press in a 9 by 9 inch container.
- Spread chocolate mixture on top
- Stick in the refrigerator to cool and then cut and serve.
Chocolate Mixture Instructions
- Place coconut oil in a sauce pan.
- Heat just until oil is melted.
- Remove from heat and add remaining ingredients.
- Whisk together.
