Behold the lowly graham cracker. The graham cracker is a staple of campfires and picnics. They are a favorite whether they are cinnamon grahams or honey grahams. The Amish love graham crackers because they will keep forever if kept packaged in their sleeves. Graham crackers can be crumbled up in a homemade granola, used for campfire s'mores or made into these delicious cookies!

Amish Graham Cracker Cookies
Ingredients
- 2 cups butter
- 1 ½ cups brown sugar
- 1 ½ cups white sugar
- 4 eggs
- 4 cups flour
- 3 cups graham cracker crumbs
- 2 teaspoons baking powder
- 2 teaspoons baking soda
- 1 teaspoon salt
- 3 cups chocolate chips (opt)
Instructions
- Cream together softened butter and sugar.
- Add eggs, beat together until fluffy.
- Add remaining ingredients.
- Mix and drop onto ungreased cookie sheet by rounded spoon fulls.
- Bake at 350 for 10 minutes or until very lightly browned on bottom of cookie.
