These are two Amish recipes that could come in handy this Memorial Day weekend. While the Amish don't typically embrace Memorial Day to remember the departed (the holiday has militaristic roots and that makes many of the pacifist Amish squeamish) they do take advantage of the 3-day weekend for extra family time, fishing, camping or picnics. These are two recipes that I have in my archives, both perfect for a picnic and you'll find them at some Amish gatherings! The barbecue sauce recipe is formulated to use on 10 chickens which is a large amount for most of us, so feel free to cut back the recipe a bit! If you click the sweet and sour barbecue sauce recipe you get the right recipe, but the wrong photo...the photo shows baked beans....some glitch and I just couldn't fix it.
- 3 cups water
- 3 cups vinegar
- 3 Tablespoons pepper
- 5 Tablespoons Worcester sauce
- 2 Tablespoon sugar
- 8 Tablespoons salt
- ½ pound butter
- 1 onion, chopped fine
- Bring to boil.
- Simmer on low for 30 minutes.
- Use this to baste chicken on the grill.
- Leave the skin on the chicken.
- Grill 45 minutes to 1 hour.
And this is a delicious recipe for bacon baked beans. I had these at an Amish benefit supper once and all I can say is YUM!
- 15 ounces of kidney beans
- 15 ounces of butter beans
- 15 ounces of lima beans
- 15 ounce can of drained pork and beans
- ½ pound bacon, cut into small pieces
- 1 large onion, chopped
- 2 cloves garlic, chopped
- ¾ cup brown sugar
- ½ cup ketchup
- ½ cup vinegar
- ¼ cup molasses
- 1 teaspoon dry mustard
- Preheat oven to 350 degrees.
- Place kidney beans, butter beans, Lima beans, and pork and beans in a 2-quart casserole dish.
- Heat a saucepan over medium heat; cook and stir bacon, onion, and garlic until bacon is browned, about 10 minutes.
- Pour off excess fat.
- Whisk brown sugar, ketchup, vinegar, molasses, and mustard into bacon mixture; simmer until cooked through, about 20 minutes.
- Pour sauce over beans in the casserole dish.
- Bake in the preheated oven until bubbling, 1 hour 15 minutes.
