    Amish Skillet Zucchini

    Amish Skillet Zucchini

    Ingredients
    • 1 zucchini squash, shredded
    • 1 large onion, shredded
    • 1 /2 pound ground beef
    • 1 teaspoon salt
    • 1 /4 cup margarine
    • 2 eggs
    • 1 /3 cup milk
    • 3 /4 cup cracker crumbs
    • 1 /4 teaspoon black pepper
    Instructions
    1. Heat margarine in a large skillet, add onion and zucchini squash.  Fry ground beef in a small skillet until browned, drain. Add to zucchini simmer until soft. Add salt and pepper.  Beat eggs. Add milk. Blend at then add cracker crumbs. Add this to squash mixture.  Turn with spatula to stir. Squash will shrink when cooked.

      Lovina, Happy Birthday!! This zucchinni recipe sounds GREAT!! I sure hope mine produces this year. Last year I had a terrible garden with the drought. My radishes are very slow this year, might be the seeds.I will re-plant more seed & see what happens.
