Personally, I like large pieces of chicken, so adjust the chicken piece sizes to your taste. And you can use other meats instead of chicken, it could easily be a "Cheddar Steak" casserole.
For the bread crumbs, you can either make your own homemade bread and toast it yourself (a lot of work for bread crumbs, but delicious!) or just use store-bought. Panko breadcrumbs are a favorite.
For the cheese, a mild cheddar is probably the most pleasing to the most people which is why the recipe calls for it, but you could use grated Colby, sharp cheddar cheese, or a mixture. Some spicier fiesta cheese could be good too depending on your taste! Although I guess this is called "Cheddar Chicken" for a reason and not Colby Chicken. Parmesan cheese could even be used.

Crushed Ritz Crackers might go well with this casserole as a topping,but they pretty much go well with anything! This recipe has a lot of versatility. You can add sour cream and whisk it into the eggs, milk, and soup base. That would give this whole thing a richer flavor. A vegetable like broccoli could be mixed into this too, it would give the Amish Cheddar Chicken Casserole more depth. I'm not sure potatoes would work as well as broccoli or carrots. Rice in a delicious, creamy sauce would also be a nice addition to this meal. Feel free to cut this recipe in half.

- 5 cups fresh bread cubed
- 2 cups chopped cooked chicken
- 2 cups shredded cheddar cheese
- 6 Eggs
- 3 cups milk
- 1 finely chopped onion
- 1 teaspoon dry mustard
- 1 tsp chicken soup base

- Butter a 6-cup deep, straight-sided baking dish.
- Layer ⅓ of each bread, meat, and cheese in the dish.
- Repeat to make 2 layers.
- Beat eggs with the milk, onion, soup base and mustard until blended.
- Pour egg mixture over strata.
- Cover and refrigerate for at least 3 hours or overnight.
- Bake uncovered at 350° F oven for 1 & ½ hours or until puffy and golden.
- Serves 6 – 8 people. Note* Other meats may be substituted.
