    The Bishop's Classic Amish Oven-Baked Chicken

    This post is several years old but I wanted to refresh and update it. A classic oven-baked chicken is an Amish recipe mainstay. Mom had some chicken thawing on her counter the other day (I actually think I read somewhere that that is a food-safety no-no, but she's done that as long as I can remember and I've never gotten sick....here are some recommended ways to thaw meat but, geez, why does everything have to be dangerous?) so I figured why not give her an Amish recipe to try? She gamely accepted so I gave her a recipe for The Bishop's Classic Amish Oven-Baked Chicken. If it's good enough for the bishop then it is good enough for my parents.

    Chicken is, by the way, a staple on most Amish farms. Different chicken than supermarket chicken. Theirs are usually free-ranging, free to eat whenever suits their nutritional needs, so you get a very flavorful chicken. So try, and enjoy, this recipe for classic Amish Oven-Baked Chicken!

    Dredge the chicken in flour mixture.

    True to Amish cooking, this recipe does not have a ton of seasonings or spices, some garlic powder, onion powder, paprika, and pepper. And paprika doesn't have a lot of flavor anyway, it's more for color. Sprinklings of parsley, oregano and/or rosemary would add to this chicken if you want to experiment. For most Amish cooks, basic is better which is why this relies on basic seasonings,  and a simple dredge chicken through flour mixture. Most Amish cooks just don't reach for spices as much as other cultures.

    With just a half cup of flour, the coating is not overpowering. Among all the Amish chicken recipes I have seen - and I have seen a lot - this is one of my favorites for just ease and good taste. You could also cook some mushrooms or carrots with this chicken and sprinkle with Parmesan cheese. A nice protein packed supper, that is easy on sodium and high on flavor, definitely not a dry chicken. 375ºf is a good temperature to cook chicken.

    You'll find most Amish chicken recipes to be this way. Still, basic doesn't mean devoid of flavor. This classic Amish oven-baked chicken has a tenderness, marinating in its juices as it bakes. The result is a pretty darn good meal for something that only has six ingredients (not counting the chicken). As far as chicken breast recipes go, this one is a go-to classic, a perfect tenderness when it comes out of the oven. Use a thermometer to make sure the internal temperature of the chicken is where you want it.

    How long does it take to oven-bake chicken?

    It will depend on the thickness, but at 375 degrees, it'll be thoroughly cooked in 45 to 60 minutes, the thicker pieces tend towards 60 minutes. If you want to be exact, when the inside of the chicken is 165 degrees on a meat thermometer, then it is done.

    This chicken pairs well with some rice on the side, or maybe a salad. I like it because as long as you spray the pan with some olive oil. Steamed broccoli on the side would also go well with this chicken.

    My father declared the meal "tasty." He said they had a nice, crisp outer texture from turning half way through. They used boneless chicken breasts, but you can use chicken thighs, which is what the original recipe calls for. For an even crispier coating you could probably dip them in egg and then coat (although if you are watching calories, that would add a few) This will make the outsides nice and golden brown. You should turn chicken pieces half way through. The chicken doesn't really splatter much in the oven, even though it is a shallow cooking pan, so that was a relief.  You could cover with foil, though, if you want to ensure a clean oven. You could also use a sheet pan with a light amount of cooking spray or parchment paper.

    As far as leftovers are concerned, my parents planned to slice up the leftover chicken, and stick in the refrigerator to use in a stir-fry this weekend.  Leftover chicken can be stored in an airtight container and stuck in the fridge until you are ready to eat it again!

    • ½ cup flour
    • ½ Tablespoon paprika
    • 1 teaspoon salt
    • ½ teaspoon pepper
    • 2 teaspoons onion powder
    • 2 teaspoons garlic powder
    • 3 pounds chicken thighs

    📋  Instructions

    1. Grease a jelly roll pan or other baking dish.
    2. In a medium bowl combine flour and spices.
    3. Whisk well.
    4. Dredge chicken in flour mixture and then place in baking dish, skin side down.
    5. Bake at 375 degrees for 45-60 minutes or until chicken is cooked through.
    6. Turn over chicken once, half-way through cooking.
