    Amish Egg Noodle and Beef Casserole

    Classic Amish Beef and Noodle Casserole

    Amish and noodles go hand-in-hand.  There’s just no denying the appeal of homemade noodles, at least where this editor is concerned. Really, it just takes eggs, flour, perhaps some salt, and you essentially can get noodles out of that. Anything else is extra.

    Some Amish cooks have made things “easier “by using hand cranked "noodle-makers" that make the cutting job a lot faster. Others still cut by hand. I’ve made homemade noodles before using Amish recipes and usually just cut them out by hand. Not a big deal if you’re making a small amount, I don’t think.

    So, when I was in Hardin County Ohio a couple of weeks ago I stopped at several Amish stores where I saw homemade egg noodles for sale. Of course, I couldn’t resist buying a bag. Or two. Or three. By the time I came home I had three bags of egg noodles all of them in different shapes and sizes from different Amish cooks. I’ll be interested to taste all of them and compare.

    Once you have a bag of homemade noodles what do you do with them? Well, throw them into a casserole with veggies and beef is probably the easiest and most common way. Man, my wife made a casserole out of this that I loved. so while the recipe isn’t “Amish “per se, it’s a very simple beef and noodle casserole using Amish egg noodles, so you can’t get much more Amish than that.

    Also, she used Boca veggie crumbles instead of beef, which makes it a vegetarian version. The plant-based craze, however, hasn’t hit Amish communities in large numbers yet, but I think you’ll see it happen. Gluten-free, for instance, has started to catch on among the Amish. You’ll see the plant-based trend catch on at some point I mean, the impossible sausage sandwich from Dunkin’ Donuts is pretty darn good. And McDonald's will be rolling out its McPlant burger. But you can use hamburger or veggie crumbles in this.

    Onions

    Onions add a great flavor to this dish.

    Amish Egg Noodle and Beef Casserole

    Use Amish-made egg noodles, if you can, along with fresh ground beef or veggie beef crumbles for a veggie version!

    This is a very hearty casserole!

    I also bought some fresh peas from an Amish produce stand, which we paired with this casserole. The two together were super, the peas were so fresh and a great addition to the meal!

    So, here is this recipe, again, makes a great veggie version or use real beef for an authentic Amish egg noodle and beef experience!

    🍲 Amish Egg Noodle and Beef Casserole

    • 16 oz Amish egg noodles
    • 1 package Boca crumbles, or you could brown 1 lb of ground beef
    • 2 teaspoons olive oil
    • 1 medium white onion, diced
    • 2 garlic scapes, diced, or you could use 2-3 cloves of garlic, minced
    • Salt and pepper to taste
    • 1 can diced tomatoes
    • 1 jar vodka pasta sauce
    • 2 teaspoons Italian seasoning
    • 2 cups shredded cheese
    • Cooking spray

    📋 Instructions

    1. Spray a 9 x 13 baking dish with cooking spray. Preheat oven to 400.
    2. Boil water to cook the egg noodles. Cook according to package directions.
    3. While noodles are cooking, add olive oil to a large skillet on medium heat.
    4. When skillet is warm add diced onion and garlic scapes or minced garlic.
    5. Add ground beef or frozen Boca crumbles.
    6. Season with salt and pepper to taste.
    7. When warmed through – or beef cooked - and onions are translucent, add diced tomatoes and vodka sauce to skillet.
    8. Stir to combine.
    9. Add noodles to skillet after they are cooked.
    10. Stir to combine and transfer mixture to 9x13 baking dish and top with 2 cups shredded cheddar.
    11. Bake at 400 for about 15 minutes until cheese is melted.

    • 2 teaspoons Italian seasoning
    • 2 cups shredded cheese
    • Cooking spray

    Instructions
     

    • Spray a 9 x 13 baking dish with cooking spray.Preheat oven to 400.
    • Boil water to cook the egg noodles. Cookaccording to package directions.
