In this Easy Baked Amish Chicken and Rice recipe, you can use chicken broth in place of canned chicken soup. The cream of mushroom soup is pretty much non-negotiable, I mean, you can make your own homemade version of the soup, but that seems like a lot of trouble for this recipe.

- 1 cup uncooked rice
- 3 to 4 cups milk
- 1 can cream of mushroom soup
- 1 can cream of chicken soup
- ¼ cup chopped celery
- salt
- parsley
- curry powder
- 8 pieces of chicken

- Sprinkle rice on the bottom of 13 X 9.
- Mix soups, milk, and celery and then pour over rice mixture.
- Sprinkle with parsley, curry powder, and poultry seasoning and salt as desired.
- Lay chicken pieces on top and cover with foil.
- Bake in 300 degree oven for 3 hours and then turn to 350 and bake for another 90 minutes and remove from oven, or for even fluffier rice, leave in for another 15 minutes.
