    Amish Cheesy Double Chicken and Rice

    This is a super simple chicken and rice recipe that you would find baking in many Amish ovens on a cold winter's day. This recipe is easy, nourishing, and packed with protein and veggies, all served in a soupy, warm rice. Perfect!

    Winter takes on a different kind of rhythm in Amish settlements. Chores are different, days are shorter, and the cold permeates everything and everywhere. Cozy images of families by the woodstove are not far-fetched, they are everyday life among the Amish. After a hearty supper, like Cheesy Double Chicken and Rice, you'll see living rooms fill with simple scenes you don't see in the summer as much: families working on a puzzle, someone catching up on letter writing, children doing school lessons. Singing is a enjoyed by all and it is not uncommon for a whole room just to break out in song. It's these simple scenes that I think the Amish are so adept at capturing and cultivating.

    The reason this is called a “double chicken “casserole, is that the chicken soup is one element, also, so is the chicken breast.  Now, there are plenty of Amish cooks that would make their own homemade soup to use in this casserole. I just figured most Amish365 readers are going to do that so I used canned soup in the recipe. Store-bought will say, however, occasionally I hear from readers who are surprised that an Amish person would have canned soup in the pantry. But it’s really not all that uncommon. During the post-World War II industrial revolution when foods became more processed and mass-produced, the Amish were not immune to that. A lot of convenience foods caught on in Amish communities, often to the detriment of health. I've seen many buggies filled with cases of Mountain Dew, for instance. More so in some places than others. And canned soups became quite popular.

    This is a very basic recipe, but delicious. You can make it easy by using store-bought frozen veggies and canned chicken.

    This is before you put the cheese on, I also think the addition of some bacon could be a nice touch. And for those who want a little extra spice, feel free to sprinkle on some black pepper, paprika for more color, some red pepper flakes. Yeah, it's all good in this Amish Cheesy Double Chicken and Rice!

    After baking, you get this wonderful cheesy, chicken dish on a bed of veggies and chicken-rice soup mixture. Delicious!

    🍲 Amish Cheesy Double Chicken and Rice

    • 1 can cream of chicken soup
    • 1 ⅓ cups water
    • 3 /4 cups uncooked long grain rice
    • 1 /2 teaspoon onion powder
    • 2 cups frozen mixed vegetables
    • 1 1 /4 pounds boneless, skinless chicken breast
    • 1 /2 cup shredded Cheddar cheese

    📋 Instructions

    1. Preheat the oven to 375.
    2. While the oven is heating, stir the soup, water,  rice, onion powder, and veggies in a bowl and then pour into an 11 X 8 baking dish.
    3. Top the rice mixture with chicken.
    4. Season with salt and pepper.
    5. Cover the baking dish. 
    6. Bake for 50 minutes or until the chicken is done and the rice is nice and tender.  
    7. Remove from the oven and sprinkle with the cheese. Let stand for 10 minutes.

    Ingredients
      

    • 1 can cream of chicken soup
