    Farmhouse Cheesy Beefy Macaroni Casserole

    Cheesy Beefy Macaroni Casserole is one of these classic Amish country casseroles that are crowd pleasers, hearty plate-pilers.  My parents had this for supper and were quite pleased with the results, so if they are, I am sure you will be too.

    This casserole, by the way, goes great with a side salad and some bread.  My mom - being the mushroom lovers that we are - added a whole package of sliced mushrooms to this dish which they loved.  So if I were going to fix it, I'd do that too.  So, mushroom lovers out there, keep that option in mind,

    This casserole can be adjusted in terms of proportions. You can double and triple it easily, or you can pare it down. That’s what makes casseroles like this so popular among the Amish. This type of casserole also travels very well, and survives the bouncy buggy ride quite well. And, yes, you can freeze this for quite some time in a sealed container. So this type of casserole just has a lot of versatility to it. That’s what makes it appealing.

    There are options for spicing it up for those of you who like that. Some cayenne pepper or a pinch of red pepper flakes would work wonders on this dish, if you like heat. For some crunch you could add some finely diced celery.

    Brown the ground beef and you could use a mix of ground beef and shredded beef, you could just use shredded beef, there's flexibility here

    Mrs. Lapp's Casserole makes for a wonderful meal with some bread and spring asparagus on the side!

    🍲 Casserole Ingredients

    • 1 pound macaroni noodles
    • 1 tablespoon olive oil
    • 1 large onion, chopped
    • 1.5 pounds lean ground beef
    • 1 can tomato soup
    • 1 can mushroom soup
    • 1 cup whole milk
    • Salt and Black Pepper, to taste
    • ½ t Paprika
    • ½ t Dried Parsley
    • 1 cup shredded cheddar cheese

    📋 Instructions

    1. Pre-heat the oven to 350 - spray a large oven dish with cooking spray.
    2. Cook the pasta, in a large pot,
    3. Meanwhile, saute the Onion in the Olive Oil until soft - add the Ground Beef and cook until done.
    4. As soon as the Pasta is done - drain and return to the pot.
    5. Add the cooked Meat, Tomato & Mushroom Soups and one soup can of Milk to the Pasta - stir through - season to taste with Salt & Pepper.
    6. Transfer to the prepared oven dish - sprinkle with Paprika and Parsley - bake 25 - 30 minutes. Sprinkle cheese on top halfway through.

    Ingredients

      I made this last night, made a few tweaks just knowing my own preferences. I didn't cook the noodles beforehand, because I prefer a more al dente pasta. I added the mushrooms like you suggested, and because it was sitting on my kitchen counter, I did add a splash of sherry, though it's definitely not necessary, just a personal preference with mushrooms. It was amazing.

      Add some tomato sauce to this and you have what we call Beef a roni, kids love it and so does husband.
