Random Recipe: Mary Yoder's Dairy Casserole

"Dairy Casserole" is a recipe that I've run into repeatedly in Amish communities.  It's a very simple, hearty casserole....The milk and the cream cheese are the "dairy"components,so I guess that is why the casserole is named so. But in terms of preparation and ingredients you can't get any simpler.

The recipe comes to us from Mary Yoder from an Amish settlement in Oklahoma. Mary uses a homemade wide egg noodle in this recipe, but you can use bought spaghetti or macaroni. Also, she says you can add a dash of onion salt to this for additional flavor.

I wish I had a photo of this recipe, I am working on providing more photos of recipes in the weeks ahead, so stay tuned.  In the meantime, without further delay...Dairy Casserole!
