"Dairy Casserole" is a recipe that I've run into repeatedly in Amish communities. It's a very simple, hearty casserole....The milk and the cream cheese are the "dairy"components,so I guess that is why the casserole is named so. But in terms of preparation and ingredients you can't get any simpler.
The recipe comes to us from Mary Yoder from an Amish settlement in Oklahoma. Mary uses a homemade wide egg noodle in this recipe, but you can use bought spaghetti or macaroni. Also, she says you can add a dash of onion salt to this for additional flavor.

- 8 ounces of cooked noodles
- 2 pounds hamburger, browned
- 2 cups corn,thawed
- 8 ounces cream cheese
- 1 cup milk
- salt and pepper
- 1 can cream of chicken soup
- Combine all ingredients and bake for 1 hour at 350 or until good and hot.
