    Grandma Graber's Quick and Easy Casserole

    Even Amish cooks need quick recipes.  Just imagine that suddenly Uncle Leroy and Aunt Katie arrive from a distant settlement  with no notice and a quick supper needs to be whipped up. Well, something like this "Quick and Easy Casserole" would fit the bill.  I got this recipe from one of my favorite Amish cookbooks, one from an Amish community in Montana.

    My parents attempted this recipe and it did live up to its billing, it was quick and easy.  The recipe calls for peas, but they didn't have peas, so they substituted green beans.  They said the meal was very good but that it probably would have tasted better with peas, green beans are a bit more acidic and often don't do quite as well in casseroles.

    Okay, here is the recipe:

    You can never go wrong with noodles and hamburger

    Cook the noodles first

    And cook the hamburger first...

    And let the sunlight hit your casserole (actually, not a requirement, just thought it made a cool pic)

    My parents used green beans, but the original recipe called for peas...probably works best with peas

    Top with cheese or butter bread crumbs (or both!)

    delish

    Grandma Graber's Quick and Easy Casserole

    Ingredients
    • 1 pound hamburger'
    • 1 medium onion, chopped
    • 1 /2 pound noodles
    • 1 pint peas
    • 1 can mushroom soup
    • 1 1 /2 cups milk
    • salt and pepper
    • Optional topping of either cup of shredded cheese or buttered bread crumbs
    Instructions
    1. Fry hamburger and onion.
    2. Drain.
    3. Cook noodles.
    4. Mix mushroom soup and milk and combine with noodles, peas, and meat mixture.
    5. Bake in a greased casserole dish at 350 for about an hour. Top with buttered bread crumbs or cheese.
