"Loaf meals" are very popular among the Amish and for good reason. Amish cooks have a lot of leftover meat, often the "scraps"kind. Leftover chicken or beef stew or hamburger and mixing in some eggs, often some oats, some veggies and then baking the heck out of it.
I’ve been very surprised at the things you can make loaves out of. Ham loaf, of course, is very popular. But I’ve seen loaves made out of vegetable scraps, eggs, and even baked bread loaves made out of loaves of bread. That'll make your head spin!
The key is to have a lot of eggs in whatever loaf you’re trying to make just to hold everything together. Often, if an Amish cook a short on stuff, putting some oats into whatever loaf you’re making will help hold it together
But this homemade chicken loaf is classic comfort food. The photos are a little hazy, but we'll take what we can get.
This chicken loaf relies on eggs to hold it all together.
You can bake this in a glass, metal, or ceramic loaf pan. It'll work fine in whatever you use.
It will be a nice golden brown when you get it from the oven.
This chicken loaf is, as one of our recipe testers said, an awesome way to use leftover chicken and who doesn't have that from time to time?
You can try adding some seasoned bread crumbs next time just to add a bit more flavor. I'd be tempted to make some homemade chicken gravy to pour over it. Now THAT would be amazing, I think.
By the way Mattie Lapp's Amish Chicken loaf calls for sweet milk. All that means is "whole milk." The term is pretty dated but can still be found in a lot of old recipes. Here's a good article that delves deeper into the term.

- 3 cups diced, cooked chicken
- 1 cup soft bread crumbs
- 1 /2 cup sweet milk
- 1 teaspoon salt
- 1 /2 teaspoon pepper
- 3 eggs, separated
- 2 tablespoons melted butter
- 1 /4 cup chopped pimento

- Let crumbs stand in the milk for 10 minutes.
- Add the chicken, pepper, salt, egg yolks, butter, and pimento.
- Beat egg whites till stiff and add to the chicken.
- Place in buttered pan and bake for 45 minutes at 350.
