Amish Cornbread Salad: This is a super salad. Let's read a bit more:
Salads are popular in Amish kitchens during the summer. But they don’t always involve lettuce. or spinach. This is a cornbread salad and is quite popular in Amish kitchens. The recipe is pretty simple. You can make it super simple by buying cornbread, I suppose. Or you can make your own. We have some great simple recipes on this website for cornbread. You can use whatever kind of cornbread you prefer. Some people like a dry, crumbly cornbread, others like a more buttery bread. The only time I like dry crumbly cornbread is if I bathe it with butter.

Baked Ham Salad: This is a perfect one for summer, although not sure if it really falls under the salad category:
The recipe originally appeared in Elizabeth Coblentz's Amish Cook column and was christened "Baked Ham Salad":, but it's pretty much a baked ham casserole. It's a hot meal that would taste good as a main entrée and not so much (in my opinion) like a ham salad sandwich. I made this meal on WGN "Lunch Break" segment last year to celebrate the column's 20th anniversary. Since our weather is so summery so early, I thought I might as well share a picnic-type recipe with you!

Amish Strawberry-Rhubarb Pie: My mother-in-law made some strawberry-rhubarb pies the other night. She used the rhubarb pie filling from the Original Amish Cook Cookbook for her culinary creation. Many people temper the tart taste of rhubarb with some soothing strawberries and that is exactly what my MIL did.
And look at the gorgeous pie she came out with! So I thought I'd share with you two recipes, one is for the strawberry-rhubarb filling which uses the Amish Cook's original recipe (with strawberries added) and then the original Amish Cook's "never fail pie crust." It's a very old recipe, it even calls for lard.
