    Mexican Summer Corn Salad

    Mexican Summer Corn Salad: Here's a bit about this delicious dish: As someone who loves corn, this salad is right up my alley.  Forget a lettuce salad, give me a corn salad any day.  And this amazing mixture and melding of flavors is, yeah, amazing.  Now, about those Fritos….Salty snacks like Fritos, Doritos, potato chips and the like do have a following in Amish homes.  100 years ago the Amish were a far more insulated culture, but they aren’t anymore. I mean, any Amish grocery sells bags of chips and boxes of cereal and the like.  Yes, many of their customers are non-Amish, but plenty of Amish shop at these places too.  So snacks like Fritos and other chips have gained surprising currency among the Amish.  Because of this, I’m not surprised at all to see a popular recipe that contain Fritos.  In fact, I’d be surprised not to see a recipe like this popular among the Amish. Delicious summer corn salad!

    This recipe for Amish Salisbury Steak Burgers has been on my radar for a long time because it is so popular among the Swiss Amish of Adams County, Indiana. I want to thank reader Patricia for giving it try and sending some superb photos.

    This Amish Salisbury Steak Burgers recipe is a favorite among the Amish and it is very typical of these types of "poor man's" dishes that are popular in Plain homes.  Patricia accurately said the burgers turned out kind of like a Salisbury steak in flavor and style.

    Cherry Pudding: Here's some background about this dessert: This is a cherry pudding that is popular in Amish homes this time of year. SIGH, when I hear "pudding", I think of a refrigerated container of Swiss Miss creamy pudding that you eat out of a small single-serving plastic container with a spoon. Man, I love those types of puddings. But pudding in the wider sense is different than that. A lot - but not all - of the Amish pudding recipes I run in to are baked so that the final productr is more like cake than custard. Wow, for cherry pudding!
